SUPER Easy-to-make Healthy Banana Pancakes ♡
Whipping up a batch of pancakes is admittedly a speciality of mine, my childhood friends can most definitely vouch for this as it was always a sleepover ritual.
But for pancake day this year, I fancied something different – a challenge.
I am increasingly becoming fascinated with healthy alternatives to standard recipes and being able to make adjustments to my diet without sacrificing my enjoyment of food.
These pancakes DEFINITELY get the seal of approval and I am going to recommend you make some be it pancake day or not…
What you need:
(for 4/5 mini pancakes)
1 egg, 3oz Cottage Cheese (optional for added texture), 1.5oz Rolled oats, 1 Banana, 1/2 teaspoon of cinnamon & a dash of almond milk (or a milk of your choice).
1. In a blender, blend all of the ingredients into a smooth mixture.
2. Heat a little coconut oil (or butter / oil) in a saucepan, add the mixture and cook for a minute on each side.
3. Stack the pancakes with fillings of your choice.
I chose extra banana, whole earth peanut butter, blueberries and a drizzle of maple syrup…
